Festive Valentine’s Day Linzer Cookies

Candy hearts, roses, giant heart boxes filled with little chocolates. All of those come to mind when you think of Valentine’s Day, right? This year, throw a delicious curveball to the apple of your eye or make your office a little festive with our Valentine’s Day Linzer cookies! (I still wouldn’t skimp on the flowers though fellas).

Heart-shaped buttery shortbread cookies filled with raspberry jam, finished off with a dusting of powdered sugar will make anyone’s heart flutter. And wouldn’t you know it, Linzer cookies started off as a pie? Every good story should start with a pie, right?

The Linzertorte is a tart with buttery dough made of almonds, lemon zest and cinnamon traditionally filled with black currant preserves with a lattice crust.  Another nod to the Europeans for this tasty treat dating back to 1653 and named after Linz, a city in Austria (also home to the candy PEZ  just for another fun fact).

Americans did what they do and made it their own by replacing black current with raspberry jam and while most stick to the current recipe the dough is cut into cookies and form a sandwich. The cut in the cookie that exposes the jam in the middle is called ‘Linzer eyes.’ See, you learn something new every day!

Who would have thought food could have so much history. You better stock up before this treat is history! They won’t last long once you try a bite.
